I can not find find such a castle in Scotland. There is a Castle Edinburgh and this is more than likely the correct one.

John Dempster and Margaret (Templeton) Dempster brought their family to America in 1841 first landing in NY, settling in (Wayne County) Michigan and then by 1852 they had moved on to Fayette Co. Iowa. They lived at Skelton Mills, Dalrymple, Ayrshire, Scotland before coming to America. While living in Scotland, John Dempster was a Shepherd. Margaret worked in her father's woolen mill.

JOHN DEMPSTER (1802-1884)
John Dempster was born in Edinburgh Castle while his father was a soldier serving in Ireland in the war between the Protestants and Catholics.
The members of the family were weavers by trade and John was reared to that occupation. He also led the life of a shepherd upon the hills of Scotland and could shear seventy sheep per day and weave forty yards of cloth. It was reported that as a shepherd John would take a whistle, dog, a ladder, some yarn and knitting needles with his sheep and would go far up the mountainsides. After he would reach a favorable feeding place for the sheep he would adjust the ladder, which had a bag like seat or pouch, which was used to carry the knitting while on the way up the mountain. From the top of the ladder he could sit comfortably and knit and at the same time tend his flock. Years later John taught all his children to hook rugs, knit mittens, scarves and stockings. Many times there were terrible storms in the mountains and the streams in the valley were so swollen that John would keep the sheep on the mountain sides rather than risk crossing the river.
His educational advantages were limited and when he was permitted to attend school he had to walk a distance of six miles.

William Dempster was a brother of John Dempster (Sr.). He came to America from Scotland, worked for the Great Western Railroad, was in an accident and was crushed between a train and a bridge. He died at Amboy, Illinois.
His children were Frank, Libbie and Will. Libbie visited John (Jr.) telling him that her mother had willed all her property to John, because she did not like Libbie's husband. John signed off in favor of Libbie having her mother's property.
